The tasks a Malt Vinegar Maker is expected to perform include:
Supervising all processes concerned with the manufacture of malt vinegar
Observing operations, such as the receiving and cleaning of grain
Steeping of grain in tanks filled with water
Spreading of steeped grain on the floor
Grinding of grain
Making and fermenting of mash
Clarifying fermented vinegar by filtering
Giving directions concerning temperature, rate of flow of materials and quantity of materials needed
Tasting the vinegar and giving instructions as to alterations in the composition of contents
Knowledge of production processes and quality control
Skilled in operating tools and equipment
Knowledge of techniques used for fermenting
Familiar with the entire process of making malt vinegar
Skilled in checking the malt content and other compositions by tasting
