The tasks a Chocolate Maker, Helper is expected to perform include:

Operating machines and equipment to relieve regular operators engaged in processing cocoa beans

Controlling roaster that roasts cocoa beans

Tending mill to grind nibs (cracked cocoa beans) into liquid chocolate of specified fineness

Managing hydraulic press to extract cocoa butter from chocolate liquor

Operating cocoa room machinery and equipment

Grinding and pulverising cocoa cakes into cocoa powder

Mixing ingredients, such as chocolate liquor, sugar and powdered milk to make sweet chocolate

Operating refining machine to grind chocolate paste to specified consistency

Operating tempering equipment to control temperature of chocolate in cooling process

Tending moulding machines, pressure cookers and dryers

Assisting in supervising and training production line workers

Basic knowledge of the baking procedures

Skilled in tempering, moulding and sculpting chocolates

Basic knowledge of grinding and refining techniques

Skilled in using a thermostat

Knowledge of various methods to dehydrate the cocoa beans

Knowledge of different flavours and other ingredients added to chocolates

Equipped in operating machines and equipment used in processing cocoa

Basic knowledge of the entire process of chocolate making
