Minimum 0-2 years of experience required

The tasks a Cooker Operator is expected to perform include:

Operating steam heated open pan or vacuum pan to cook glucose, sugar, milk, water and other ingredients into syrup of required consistency for making candies or sweets

Mixing sugar, water, glucose, milk and other ingredients in prescribed proportions according to formula

Pouring mixture into cooking kettles

Turning valves to admit steam and setting pressure gauge and thermostats to cook ingredients at specified temperature

Stirring syrup occasionally while it is cooking

Testing consistency of syrup with a hydrometer

Opening discharge valve and starting pump or tilting cooker or kettle to pour or dump syrups into heaters or onto cooling belts or tables

Beating or kneading confection to attain specified consistency as determined by colour and texture

Skilled in using pressure gauges and thermostats

Knowledge of using a hydrometer

Basic knowledge of confectioning techniques

Knowledge of criticality of temperature while manufacturing confectionery products

Proficient in dough beating and kneading methods

Ability to analyse colour and texture of the final product
