The tasks a Yeast Maker is expected to perform include:
Producing the yeast required in the fermentation of mash used in the production of distilled and malt liquors
Weighing out the prescribed quantity of barley, rye or other grain meal
Dumping it into a measured quantity of water heated to a specific temperature in a special wooden vat
Mixing the grain and water, using an agitator
Cooking the mixture by admitting steam into the coils, in a vat
Cooling the mash by running cold water through the cooling coils in the vat
Pouring the prepared yeast solution or culture into the mixture and stirring it with an agitator
Regulating the temperature of the fermenting mash by running hot or cold water through the coils in the vat
Ascertaining the specific gravity and acid content of the mash by using a hydrometer
Performing simple chemical tests on the mash
Separating the yeast from the liquor by means of a centrifugal separator or filter press
Drawing off the yeast from the fermentation tanks by a suction pump or by skimming
Knowledge of production processes and quality control
Skilled in handling and managing valves and agitators
Knowledge of the criticality of temperature on the final product quality
Skilled in cooling techniques
Skilled in performing chemical tests
Basic knowledge of the entire process of manufacturing malt liquors
Knowledge of all the ingredients and the process of making yeast
Equipped in using equipment like hydrometer, suction pump, etc.
