The tasks a Condiment Maker (Food Canning & Preserving) is expected to perform include:

Making various kinds of chutneys, pickles and ketchup from vegetables, fruit, fish meat and spices

Using preservatives such as vinegar, salt, sugar, oil and other ingredients

Sorting and selecting mature vegetables, fruits, etc.

Cleaning the product with water and discarding the decayed food pieces

Cutting or chopping the product into small pieces

Mixing the ingredients such as salt, vinegar or sugar in the required proportion in barrels, vats or jars according to the formula to make the pickling or flavouring brine

Dumping product such as vegetables, fruit, fish or meat into the solution to soak or cook for the specified time

Examining, feeling and tasting the product to evaluate the colour and flavours

Adding the ingredients or modifying the cooking and forming operations as per the requirements

Cooking all the ingredients separately before mixing

Packing the product into the containers in layers by covering each layer with the preservative compound

Specialising in making a particular type of condiment

Knowledge of making chutneys, pickles and ketchup

Knowledge of food safety and handling procedures

Skilled at judging the quantities of syrup, spices, sugar and colouring matter that goes in various chutneys, pickles and ketchup

Skilled at making a particular type of condiment

The Food Industry in India

The Indian Brand Equity Foundation in their report on the Food industry of India have referred to this industry as the highest profit incurring sector considering the scope it has to offer for value addition. In particular the food processing industry in India has been recognized as a high-priority area. This is because the food processing industry is one of the largest industries in India and is ranked fifth in terms of production, consumption, export and expected growth.

The latest figures have revealed that the total food production in India is likely to double in the next 10 years as the country?s domestic food market is estimated to reach US$ 258 billion by 2015.

Considering world data, the Indian food and grocery market is the world?s sixth largest, with its retail contributing 70 per cent of the sales. It is projected to grow at the rate of 104 per cent, touching US$ 482 billion by 2020. This indicates a vast scope for both investors and exporters.

With all these figures in consideration, it is safe to say that the demand for a Condiment Maker (Food Canning and Preserving) will surely increase in the coming years.
