The tasks a Cook, General (Food Canning and Preserving) is expected to perform include:

Cooking meat, fruits, vegetables or other foods in large quantities according to recipes

Weighing and measuring the ingredients according to the recipe

Loading the ingredients into kettles, pressure cooker pans and frying machines both manually or by means of chutes or conveyors

Observing the thermometer and gauges

Turning the valve to admit steam into the pressure cookers so as to heat and cook the contents

Kittling and cooking the ingredients by adding syrup, spices, sugar, colouring matter or other substances as required

Stirring the mixture in the kettle to blend and prevent the scorching of the contents

Draining off the cooked ingredients by opening the valve at the bottom of the vessel or by blowing material through the drain with steam

Stirring the contents to be preserved with a mechanical agitator

Testing the preserving mixture with a hydrometer or other instrument to determine consistency

Knowledge of canning or preserving

Knowledge of food safety and handling procedures

Skilled at judging the quantities of syrup, spices, sugar and colouring matter that goes in each preserving or canning lot

Proficient at conducting tests that are used for the inspection of products

Skilled in evaluating the quality of the food preserved

Knowledge of all the weighing and measuring standards

Skilled at testing the consistency of the preserved item by using a hydrometer and other testing instruments

The Food Industry in India

The Indian Brand Equity Foundation in their report on the food industry of India have referred to this industry as the highest profit incurring sector considering the scope it has to offer for value addition. In particular the food processing industry in India has been recognized as a high-priority area. This is because the food processing industry is one of the largest industries in India and is ranked fifth in terms of production, consumption, export and expected growth.

The latest figures have revealed that the total food production in India is likely to double in the next 10 years as the country?s domestic food market is estimated to reach US$ 258 billion by 2015.

Considering all the world data the Indian food and grocery market is the world?s sixth largest with its retail contributing 70 per cent of the sales. It is projected to grow at the rate of 104 per cent, touching US$ 482 billion by 2020. This indicates a vast scope for both investors and exporters.

Given these figures it is safe to say that the demand for a Cook, General (Food Canning and Preserving) is there in the present and will surely increase in the coming years.
