The tasks a Yeast Maker is expected to perform include:

Controlling the equipment to prepare a mixture of mash and yeast for use in the manufacture of distilled liquors

Weighing specified quantities of rye and malt meal

Dumping the mixture into the yeast tub (cooker) filled with the specified amount of water

Opening the valves to admit steam that circulates through the coil pipes in the tub and cooks the mixture

Revolving the blades in the tub to agitate the mixture as it cooks

Observing the temperature gauges and increasing or decreasing the steam pressure to maintain a constant temperature as the mash cooks

Pouring the yeast culture into the cooked mash

Mixing the mash with revolving blades

Testing the mash to determine the temperature and specific gravity

Recording the temperature results using a thermometer and hydrometer

Observing the gauges and increasing or decreasing the steam to ensure that the mash ferments at a constant temperature

Notifying the Fermentation Operator (Beverage) when the mash is ready to be pumped into the fermentation tank

Removing a sample of mash for laboratory analysis

Knowledge of relevant tools and equipment

Knowledge of safety and hygiene regulations

Basic knowledge of fermentation and microbiology

Skilled in measuring temperature using different equipment

Knowledge of the temperature effects on the final product

Knowledge of solubility of specific ingredients

Ability to differentiate between useful yeast and harmful yeast

Knowledge of the entire process of making beverages
