The tasks a Candy Maker is expected to perform include:

Mixing and cooking candy ingredients by following, modifying or formulating recipes to produce a product of specified flavour, texture and colour

Cooking ingredients at specified temperatures in an open fire, steam jacketed kettles, in a batch or in continuous pressure cookers

Casting candy by hand using moulds and a funnel

Tending the machine that castes the candy in starch or rubber moulds

Spreading the candy onto cooling and heating slabs

Kneading in the machine-pulling candy

Spinning or rolling the candy into strips that are ready for cutting

Examining, feeling and tasting the product to evaluate its colour, texture and flavour

Knowledge of the different types of candies and the procedure involved to make them

Ability to follow a recipe and work with different cooking equipment

Knowledge of modifying a recipe to change the texture of the candy

Basic knowledge of baking procedures

Skilled in creating new recipes according to demand

Skilled in making hand-made candies

Skilled in using the machines involved in candy-making
