The tasks a Chocolate Maker is expected to perform include:

Making chocolate slabs or bars grinding cocoa beans, heating ingredients and forming slabs

Grinding cracked cocoa beans in mill to reduce them to thick liquid or paste

Pressing cocoa butter from ground beans, using hydraulic press to obtain blocks of cocoa

Grinding pressed flocks of cocoa to thick liquid

Mixing liquid chocolate, sugar and other ingredients in required proportions to a dough like consistency in machine

Feeding coarse mixed chocolate into machine to convert it to flakes

Heating mixed flaked chocolate and cocoa butter in steam heated pans to desired texture

Adding flavour to obtain chocolate bars or slabs

Ability to follow a recipe and work with different cooking equipment

Knowledge of modifying a recipe to change the texture of chocolate

Basic knowledge of the baking procedures

Skilled in tempering, moulding, sculpting and decorating chocolates

Skilled in creating new recipes

Knowledge of different flavours added to chocolates
