The tasks a Pickler (Meat Product) is expected to perform include:

Loading cuts of meat into pickling vats or barrels to cure the meat preparatory to smoking

Packing and arranging the meat in vats or barrels by hand or with a meat hook to ensure maximum saturation

Turning the valves to admit the curing solution into the vats or pouring in the solution by hand

Covering the vat or barrel to keep the meat protected and submerged in the solution

Sticking the trier (hook) into the meat and smelling the trier to determine the degree of curing

Opening the valves or pulling the bungs to drain the vats and barrels

Removing the cured meat for further processing

Dumping the frozen meat in the water tank to defrost it preparatory to curing

Rolling the barrels to rearrange the meat and ensuring maximum saturation

Flushing or blowing the marrow from the ham bones

Cleaning the vats with water and steam hoses

Knowledge of the saturation process of meat

Skilled in handling and rolling barrels

Knowledge of adequately packing meat to avoid spoilage

Skilled in cleaning meat and preserving it

Ability to examine the meat
